About Bite  of Ethiopia

After years of feeding Seattle, I wanted to build a place that reflects exactly how I want to cook, serve, and welcome people. Bite of Ethiopia is that place.

Here's what you can expect from me:

  • Hand-prepared, made-to-order dishes — no shortcuts, no pre-batched stews sitting all day

  • Fresh injera made daily, 100% gluten-free, the way it's meant to be

  • A fully vegan vegetarian combo that stands on its own, not as an afterthought

  • Authentic spice blends — berbere, mitmita, and niter kibbeh made in-house from my own recipes

  • Gursha hospitality — the Ethiopian tradition of feeding someone by hand as a gesture of love. Every plate that leaves my kitchen carries that spirit.

About Menbere

Hi, I'm Menbere Medhane — chef, founder, and the woman behind Bite of Ethiopia.

I was born and raised in Addis Ababa, where I learned to cook the way most Ethiopian women of my generation did: standing beside my mother and aunts, watching spices toast, learning by smell and by feel long before I ever measured anything.

 

Food in Ethiopia isn't just nourishment — it's how we say welcome, how we say I love you, how we say sit, stay a while.

When I moved to Seattle, I brought those recipes with me, and I've spent years sharing them with this city.
